(Mango Ring with Strawberry Glaze, serves about 10)
Material:
1 package Mango DoFu Delight®;
3 cups water*;
1-1/2 cups milk**;
1 container strawberry glaze;
Fresh strawberries and mango. (1 cup = 8 fl oz (250 ml))
Method:
Mix 1 package Mango DoFu mix and water together.
Stir and heat to a boil.
Remove from heat, and then mix in milk.
Pour mixture into a bund cake pan sprayed with non-stick cooking spray.
Refrigerate for 1-2 hours or until set.
Take out when firm, put pan in warm water about 1 to 2 minute.
Moisten tips of fingers and gently pull DoFu jelly from edge of mold.
Put plate on top of cake and flip upside down, shake lightly until mold comes out.
Cut strawberries in quarters and mango in cubes.
Fill fruit in center of mold.
Pour strawberry glaze over fruit and serve.
Amount of water may vary within 1/2 cup. More water gives softer gel; less water, firmer gel.
*Milk may be replaced by same amount of water for a clear jelly.
Or, for a sweeter jelly, replace milk with your desired amount of sweetened condense milk.
Or, replace milk with non-dairy creamer & equivalent of water to avoid lactase.
