DoFu Delight

Material:

• 1 package Coconut DoFu Delight®;

• 2-1/2 cups water*; 1 cup pineapple juice;

• 1-1/2 cups milk**;

• Pineapple tidbits and/or coconut flakes.   (1 cup = 8 fl oz (250 ml))

Method:

1. Mix 1 package of Coconut DoFu mix and water.

2. Stir and heat to a boil. Remove from heat, and then

3. Mix in pineapple juice, and mix in milk.

4. Pour mixture in parfait glass.

5. Refrigerate until set (about 15-20 minutes).

6. When ready to serve, garnish with pineapple and coconut flakes. Serves 6-8.

*Amount of water may vary within 1/2 cup. More water gives softer gel; less water, firmer gel.
**The same amount of water may replace milk for a clear jelly. Or, For a sweeter jelly, replace milk with your desired amount of sweetened condensed milk. Or, Replace milk with non-dairy creamer & equivalent water to avoid lactase.
