Mango Ring with Strawberry Glaze, serves about 10

Material:

  • 1 package of Mango DoFu Delight®;

  • 3 cups water*;

  • 1-1/2 cups milk**;

  • 1 container strawberry glaze;

  • Fresh strawberries and mango. (1 cup = 8 fl oz (250 ml))
     

Method:

  1. Mix 1 package of Mango DoFu mix and water. 

  2. Stir and heat to a boil. 

  3. Remove from heat, and then mix in milk. 

  4. Pour mixture into a bund cake pan sprayed with non-stick cooking spray. 

  5. Refrigerate for 1-2 hours or until set.

  6. Take out when firm, and put the pan in warm water for about 1 to 2 minutes. 

  7. Moisten the tips of your fingers and gently pull DoFu jelly from the edge of the mold. 

  8. Put a plate on top of the cake and flip it upside down, shake lightly until mold comes out. 

  9. Cut strawberries in quarters and mango in cubes. 

  10. Fill the fruit in the center of the mold.  Pour strawberry glaze over the fruit.  Serve.

 

*Amount of water may vary within 1/2 cup. More water gives softer gel; less water, firmer gel.
**The same amount of water may replace milk for a clear jelly. Or, For a sweeter jelly, replace milk with your desired amount of sweetened condensed milk.  Or, Replace milk with non-dairy creamer & equivalent water to avoid lactase.
